Mad Hatter's honey-processed coffee begins its transformation with a curious twist. The outer skin is gently removed leaving the sweet and sticky pulp is left to cling to the coffee bean. This magical layer left behind ferments just enough to unlock an enchanting sweetness that's anything but ordinary. Once de-pulped, the beans are laid to rest on covered beds, where they bask for up to 20 days. Slowly drying under a watchful sky, as if dreaming themselves into their final, flavorful form.
